On your pet's action bar it has a sword icon, shield icon and a cat or dog (small, cute cuddly animal) icon.

Sword = Aggressive: Attack any enemy that comes near you.

Shield = Defense: Will attack anything that attacks you.

Cuddly Animal = Passive: Will only attack what you specifically tell it to.

If you want to stop just certain abilities, then right click them on your pet bar or your pet spell book. with them turned off, your pet wont use them.
